I'm trying to make a truffle.

I can create the big scoop – but the chocolate shell is the problem. It is difficult to melt chocolate – doesn't easily become liquid when poured into the scoop of ice cream that melts on contact land, so the chocolate doesn't stay it only flies to the side. If I was a bit cooler so it doesn't melt the chocolate, it is difficult all over again! How could I make this chocolate shell? Recently rolled in chocolate syrup – i put it in the freezer, but I'm not sure the syrup has the ability to freeze and if so could be crap – or is this is what I use? I have also used cinnomin cocoa powder or as an alternative shell and it works fine, but I still want chocolate!
